Classic Vanilla Birthday Cake
The kitchen table was buried under a drift of powdered sugar and torn wrapping paper by noon on Saturday. I still don’t measure the vanilla extract for this vanilla birthday cake, and I am not going to start now.
My youngest wanted a simple double layer with white frosting for his eighth year. We kept it classic because that is what actually gets eaten down to the last crumb.

Ingredient Notes
Unsalted butter lets you control the exact amount of salt going into both the batter and the frosting. Make sure it is truly soft to the touch before you start mixing, or it will never cream properly with the sugar.
Buttermilk brings a subtle tang that cuts through the heavy sweetness of the sugar. If you use regular milk instead, the crumb loses that tender rise and signature structure.
Pure vanilla extract gives the cake its authentic bakery aroma and warm background flavor. Avoid imitation extracts if you can, because they leave a harsh aftertaste in baked goods.

How I Make It
- Whisk dry ingredients. Combine the flour, baking powder, and fine salt in a medium bowl until blended, until no small clumps remain in the mix.

- Bake the layers. Divide the batter evenly between two prepared 9-inch pans and bake at 350°F for 28 to 30 minutes, until a tester comes out clean.
- Cool completely. Let the pans sit for 5 to 10 minutes, then turn out the layers onto wire racks to cool completely before frosting.

- Assemble the cake. Flip the bottom layer domed-side down on a plate, spread a thick layer of frosting, and top with the second layer.

Make-Ahead and Leftovers
Store leftover cake under a cake dome at room temperature for up to two days. If your kitchen runs warm, move the cake to the refrigerator so the butter-based frosting stays firm.
Bring refrigerated slices back to room temperature on the counter for about thirty minutes before serving. Cold buttercream tastes stiff and hides the vanilla flavor.
