Creamy Tres Leches Cake

The kitchen refrigerator hummed loudly last night while I whisked the whipped cream topping for this cake. It’s an old favorite in our house, especially when everyone gathers around the kitchen island after a long week.

You’ll love how the sponge cake drinks up every drop of the sweet milk mixture until it’s wonderfully moist. I still don’t measure the vanilla, and I’m not going to start, but I always make sure to poke the warm sponge all over so the liquid reaches the very center.

How do you keep tres leches cake from getting soggy? Pour the milk mixture slowly over the warm cake so it absorbs evenly without pooling on top.

Let the cake chill completely in the refrigerator before adding the whipped cream topping so the layers stay firm and slice cleanly.

What Goes Into Tres Leches Cake

  • All-purpose flour 1 cup (120 g)
  • Baking powder 1 1/2 tsp
  • Salt 1/4 tsp
  • Sugar 1 cup (divided: 3/4 cup for the batter and 1/4 cup for whipping)
  • Whole milk 1/3 cup
  • Vanilla extract 1 tsp
  • Evaporated milk 12 oz (one can)
  • Sweetened condensed milk 9 oz (about 2/3 of a 14 oz can)
  • Heavy cream 1/3 cup (for the milk soak)
  • Heavy cream 2 cups (for the whipped topping)
  • Fresh berries 1 cup (optional, for garnish)

Ingredient Notes

The flour and baking powder form the dry base of the sponge cake. Make sure to use standard all-purpose flour rather than self-rising flour, since you’re adding your own measured baking powder to control the rise.

The trio of milks defines the dessert. Evaporated milk provides body, sweetened condensed milk brings rich sweetness, and a splash of heavy cream rounds out the liquid soak.

Heavy cream whipped with a little sugar creates the fluffy topping. Make sure your cream is thoroughly chilled before whipping so it holds stiff peaks without breaking.

How I Make It

  1. Whisk dry ingredients. Combine the all-purpose flour, baking powder, and salt in a medium mixing bowl until mixed evenly, setting the bowl aside near your mixer.
  2. Beat the batter. Whip the sugar with the whole milk, vanilla, and eggs until pale, then gently fold in the dry flour mixture until just combined and smooth.
  3. Bake the sponge. Pour the batter into your prepared pan and bake at 350°F until the top is golden and the center springs back when pressed lightly, about 35 minutes.
  4. Poke the cake. Pierce the warm cake all over the top with a skewer or fork, making sure to poke down near the bottom without breaking through.
  5. Pour the milks. Whisk the evaporated milk, condensed milk, and 1/3 cup of heavy cream together in a measuring cup, then pour it slowly over the warm cake until the liquid is fully absorbed.
  6. Chill the cake. Place the pan in the refrigerator to chill thoroughly and let the milk soak deep into the crumb for at least three hours.
  7. Whip the topping. Beat the remaining 2 cups of heavy cream with the remaining 1/4 cup of sugar until stiff peaks form, then spread it evenly across the chilled cake.

Make-Ahead and Leftovers

Keep the frosted cake covered tightly with plastic wrap or foil in the refrigerator for up to three days. The sponge continues to absorb moisture as it sits, so the texture stays rich and creamy throughout.

Avoid leaving the cake at room temperature for more than two hours due to the dairy in the topping and milk soak. Freezing is not recommended because the soaked sponge and whipped cream topping change texture when thawed.
