Classic Fresh Berry Chantilly Cake

Four cups of fresh berries go into this fresh berry Chantilly cake, and not one of them goes near the stove. They’re tossed with lemon zest and juice and tucked between four thin layers of vanilla cake.

The frosting is what gives the cake its name. Whipped cream gets folded into mascarpone and cream cheese beaten with powdered sugar, and it spreads in soft, thick swoops.

I keep the two halves of that frosting in separate bowls right up until the fold. The cream is whipped stiff on its own, and the cheeses are beaten smooth on their own.

A thin swipe of warm jam goes under each layer of cream. It’s a small step, and it carries the berry flavor through the whole slice.

What is the frosting on a berry Chantilly cake?

A berry Chantilly cake is frosted with Chantilly cream: heavy cream whipped to stiff peaks with vanilla, then folded into cream cheese and mascarpone beaten smooth with powdered sugar. This recipe uses 2 cups of heavy cream, 8 ounces each of cream cheese and mascarpone, and 2 cups of powdered sugar.

Why This Recipe Works

  • The Stay At Home Chef, Cakes by MK, and Simply Home Cooked all whip 2 cups of heavy cream for the frosting and use 1 cup of powdered sugar for every 8 ounces of soft cheese. Three separate bakers landing on that ratio is why I trust its sweetness.
  • Whipping the cream alone first and folding it in last keeps its air. Beat it together with dense cheese from the start and the frosting goes flat.
  • Cake flour, butter, a little oil, and 3 eggs make a tender layer sturdy enough to slice in half.

I fold with a rubber spatula and stop the moment the white streaks of cream disappear.

Why This One’s Worth Making

  • The berries stay fresh and whole, with no cooked filling to stir or cool.
  • Two cake pans give you four layers.
  • Strawberries, blackberries, raspberries, and blueberries all work, in any mix you like.
  • The jam needs only 30 seconds in the microwave.

What Goes Into Fresh Berry Chantilly Cake

  • 1 cup unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 2 tsp vanilla extract
  • 1 1/4 cups whole milk, warmed to 100°F
  • 3 large eggs, room temperature
  • 1/4 cup vegetable oil
  • 3 1/2 cups cake flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 2 cups heavy cream
  • 2 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 8 oz mascarpone, softened
  • 2 cups powdered sugar
  • 4 cups fresh berries (strawberries, blackberries, raspberries, or blueberries)
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2/3 cup seedless raspberry or strawberry jam
  • 1/4 cup water

Ingredient Notes

Cake flour is what keeps these layers tender, so it’s worth buying a box. The butter and eggs should be at room temperature, and the milk goes in warmed to 100°F.

I check that number with a thermometer instead of guessing. Mascarpone and cream cheese go in at equal weights, 8 ounces each, and both need to be soft before you beat them.

Softened, they beat light in about 2 minutes, which is all this recipe gives them. Use fresh berries for this cake.

Any of the four works, alone or mixed, and large strawberries are easier to layer if you halve or slice them. For the jam, pick a seedless raspberry or strawberry so the thin layer under the cream stays smooth.

Let’s Make It

  1. Prep the pans. Grease two 9-inch round pans and line the bottoms with parchment paper. Heat the oven to 350°F, and wait until it has fully come up to temperature before any batter goes in.
  2. Mix the wet ingredients. Warm the milk to 100°F, then fork it together with the eggs and oil in a liquid measuring cup. Stop when the yolks are fully broken up and no streaks of egg are floating on top.
  3. Whisk the dry ingredients. In another bowl, whisk the cake flour, baking powder, and salt together until the baking powder is evenly mixed and no small clumps remain.
  4. Cream the butter. Beat the butter and sugar with a hand mixer for about 2 minutes, until creamy, pale, and fluffy. Beat in the vanilla until it disappears into the mixture.
  5. Alternate dry and wet. Add a third of the dry mix, then half the wet, another third of the dry, the rest of the wet, and the last of the dry. Mix just until no dry pockets of flour remain, scraping the bowl.
  6. Bake the layers. Divide the batter evenly between the pans and bake for 25 to 30 minutes, the window The Stay At Home Chef gives. I check with a toothpick in the center, and it should come out clean with the top springing back.
  7. Cool completely. Let the cakes sit in their pans for 5 minutes, then turn them out onto a wire rack. Leave them until the bottoms feel cool to your palm, with no warmth left in the center.
  8. Whip the cream. Beat the heavy cream with the vanilla until stiff peaks form. When you lift the beaters, the peaks should stand straight up without curling over.
  9. Beat the cheeses. In a separate bowl, beat the cream cheese and mascarpone for about 2 minutes, until light and fluffy. Add the powdered sugar and beat until smooth with no lumps.
  10. Fold the Chantilly cream. Fold the whipped cream into the cheese mixture with a rubber spatula, just until no white streaks remain. Refrigerate it until you’re ready to build the cake.
  11. Prep the berries and jam. Toss the berries with the lemon zest and juice. Stir the jam and water together in a microwave-safe bowl and microwave about 30 seconds, until melted and loose enough to spread.
  12. Layer and frost. Slice each cake in half for four layers. On the first three, spread a third of the jam, an even layer of cream, and about 2/3 cup of berries. Add the last layer and frost the top and sides with the remaining cream.

Tips From My Kitchen

  • It’s much easier to halve the rounds with a long serrated knife. Score a line around the side first, then saw gently through.
  • Press the berries lightly into the cream, so the next layer won’t rock.
  • Extra berries on top are optional, and I’ll admit I always pile on more than I need.
  • Because the frosting is whipped cream and soft cheese, treat the cake like any perishable dairy dessert. It shouldn’t sit out of the fridge longer than 2 hours.

Make-Ahead and Leftovers

The cake sources don’t say how long the finished cake keeps, whether it has to be refrigerated, or whether it freezes, so I won’t put a number on any of it. I keep it covered in the fridge because of the dairy in the frosting.

This is a cake to eat while the fruit looks bright and the frosting holds its shape. When the cut berries start to weep into the cream, it’s time to finish it.

No source says how far ahead the layers or the cream can be made, either. The cream waits in the fridge from the moment it’s folded until assembly.

What to Serve With Fresh Berry Chantilly Cake

  • A pot of hot coffee, since the bitterness sits well against the sweet cream.
  • A bowl of extra fresh berries on the side, for anyone who wants more fruit in each bite.
  • Tall glasses of cold milk, which keep the rich frosting from feeling heavy.

Equipment Worth Having

  • Two 9-inch round cake pans and parchment paper, so the layers release cleanly.
  • A hand mixer, for creaming the butter and whipping the cream to stiff peaks.
  • A rubber spatula, for scraping the batter bowl and folding the Chantilly cream gently.
  • A long serrated knife, for cutting each round into two even layers.
  • A wire rack, so the layers cool completely without steaming on the bottom.

Questions I Get About Fresh Berry Chantilly Cake

Can I use frozen berries in a berry Chantilly cake? Cakes by MK says the whole berries must be fresh, and saves frozen fruit for its cooked jam only. This version has no cooked fruit, so stick with fresh.

Why use both mascarpone and cream cheese? Cream cheese brings tang and body, and mascarpone keeps the frosting soft and rich. Folded together in equal parts with whipped cream, they spread in soft, thick swoops.

Can I make the cake ahead? No source gives a make-ahead window for the layers or the cream. I bake the layers, cool them fully, and assemble the cake once the cream is folded and chilled.
